Garth - are you looking to go for 8-bit microcontrollers or are you looking to beef things up a bit and go for 16 or 32-bit microcontrollers?

Very handy PCB layout tips there Chuck. I have used the capacitor trick before so you can fit different sized caps in, but I haven't tried any of the others. The trimpot would certainly come in handy since I've been working on a PCB where I wasn't sure of the exact type of trimpot that I would be us...

Great to hear your kids like them, unfortunately I don't have any left.

I've done quite a few projects with these RGB Matrix displays using an 8-bit microcontroller and there's no way they would have the power to do animations like those!

I would like to think they have some sort of standard for sealing them. Could you imagine what would happen if you dropped your phone in the bath or basin and the water instantly made its way to the inside of the battery.

I am sure you could come up with some sort of macro that would scan through the progmem data and paint a picture for you to then save as a PNG, however making that work could very well take longer than remaking the map.
